I recently made some stuffed pepper soup and Beth asked me to post the recipe. It’s actually very easy.
Ingredients:
8-9 oz of long grain rice (I use boil in the bag rice)
1 lb ground beef (or ground turkey)
2 cups of green pepper (red, yellow and orange work, too)
1 cup chopped onion
1 26 oz jar of chunky pasta sauce
1 14oz can of Italian style diced tomatoes
14-16 oz of beef broth.
Directions:
- Prepare rice according to package directions.
- In a large saucepan, cook the beef, green peppers and onions until meat is no longer pink. Drain off excess fat.
- Add pasta sauce to the meat mixture.
- Add the tomatoes, the broth, and the prepared rice.
- Heat through.
- Salt/Pepper to taste
